My recipe for success;  

I listen to your requirements.

Please discuss any ingredients you are unhappy with; cakes will be made to your personal dietary requirements, e.g. Alcohol free,  gluten free, dairy free, vegan, or if you don’t like any individual ingredient this can be omitted.


The one exception; I can NEVER 100% guarantee “nut free,”  as I use and have nuts in my kitchen so I can only isolate nut free cakes as far as possible.  

All manufacturers now state on their food products a disclaimer with regard to “may be produced where nuts are present!”

Sponge cakes can be covered with Butter cream, (marzipan if you wish), soft fondant icing. Marzipan can be omitted and/or substituted with white or dark chocolate paste, chocolate Ganache but may be subject to extra cost.

Sponge Cake Ingredients include:

Eggs, Butter, (never margarine unless dairy free)

flour, castor sugar,  lemon juice, Vanilla Essence

Choice of flavour, e.g.:

Vanilla and plain sponge or chocolate, orange, coffee, etc

My own favourite moist chocolate cake is one filled with Belgian White Chocolate whipped into the butter cream filling to give layers of dark chocolate cake with white filling.  Dark chocolate or  Cocoa powder are other options.

Rich Fruit Cake Ingredients include:

(but can be changed to suit individual tastes)

Pure Three Barrels French Brandy,  Eggs, Butter, Dark Brown sugar, currents, sultanas, raisins, almonds, glaze cherries, cut mixed peel, flour, mixed spice, nutmeg - all combined to my Granny’s Secret Recipe

The following are finely chopped and blitzed in a chopper so you don’t get those horrible big lumps;  chopped are almonds, glaze cherries, cut mixed peel.

Fruit Cakes covered with Marzipan, Soft Fondant Icing.

Traditional Royal Icing also available and priced separately


NOTE: Marzipan is bought to comply with Food Safety Regulations.
